This Kawakawa and Pink Peppercorn Gin Sour is a smooth and creamy cocktail with a spicy and herbal flavour from the kawakawa and pink peppercorns. The egg white adds a silky texture and a frothy foam on top. Enjoy!

 

Ingredients:

  • 60ml Kawakawa and Pink Peppercorn gin
  • 30ml fresh lemon juice
  • 15ml pink peppercorn syrup (1:1 sugar to water mix infused with pink peppercorns)
  • 15ml egg white
  • Ice
  • Pink peppercorns and kawakawa leaves for garnish

Instructions:

  1. Fill a cocktail shaker with ice.
  2. Add the Kawakawa and Pink Peppercorn gin, fresh lemon juice, pink peppercorn syrup, and egg white.
  3. Shake vigorously without ice (dry shake) for 10-15 seconds to emulsify the egg white.
  4. Add ice to the shaker and shake again for another 10-15 seconds until the shaker is frosted.
  5. Strain the mixture into a chilled short glass.
  6. Garnish with a few pink peppercorns and a kawakawa leaf.
